Here's a recipe for chicken tikka masala:
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 2 tbsp lemon juice
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp turmeric
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp grated ginger
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 1 tsp garam masala
- Fresh cilantro, chopped (optional)
Instructions:
- In a large bowl, combine the chicken, yogurt, lemon juice, cumin, paprika, turmeric, coriander, cayenne pepper (if using), salt, and pepper. Stir to coat the chicken evenly, then cover and refrigerate for at least 1 hour, or up to overnight.
- Preheat your oven to 400°F (200°C).
- Thread the marinated chicken onto skewers and place them on a baking sheet. Bake in the oven for 15-20 minutes, or until the chicken is cooked through and slightly charred around the edges.
- In a large saucepan or Dutch oven, heat the vegetable oil over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.
- Add the garlic and ginger and cook for another minute, stirring constantly.
- Add the crushed tomatoes and bring to a simmer. Reduce the heat to low and let the sauce simmer for about 10 minutes, until it thickens and the flavors meld.
- Add the heavy cream and garam masala to the sauce and stir well to combine. Let the sauce simmer for another 5-10 minutes, until it thickens to your desired consistency.
- Remove the chicken from the skewers and add it to the sauce. Stir well to coat the chicken in the sauce.
- Serve the chicken tikka masala with rice and/or naan bread, and garnish with fresh cilantro if desired.
Enjoy your delicious chicken tikka masala!
